Healthier version of lasagna made with ground turkey in place of beef, cottage cheese instead of ricotta, and low fat mozzarella.You can also use wheat lasagna noodles.

Recipe Ingredients for Leadville Lasagna

16 oz Ground Turkey, 93% Lean
1 cup, chopped Onions
2 clove Garlic
16 oz Tomatoes Diced
16 oz tomato sauce
2 tsp, ground Basil, Dried
0.33 tablespoon Oregano
1 tsp Fennel Seed
1 large Egg, Whole
2 cup 1% Lowfat Cottage Cheese Regular
8 tbsp Parmesan, Shredded Cheese
1 tbsp Parsley, Dried
1/2 tsp Pepper, Black
6 oz Organic Whole Wheat Lasagne
8 oz Mozzarella, Low Moisture, Part Skim, Shredded
8 oz Mushrooms

Recipe Directions for Leadville Lasagna

  1. Preheat oven to 375.

  2. In a large nonstick skillet, brown turkey, onion, and garlic (2 cloves minced). Drain off fat.

  3. Stir in diced tomatoes, tomato sauce (16 oz can), basil, oregano, fennel seed, and raw mushrooms (8 oz chopped or pre-sliced). Cover and let simmer for 15 minutes, stirring often.

  4. Meanwhile, beat egg and combine it with cottage cheese (2 cups), 1/4 cup of the parmesan, parsley, and pepper.

  5. In the bottom of a 13x9x2 inch baking dish, spread 1/3 of the meat sauce. Rinse noodles with hot water (they do not need to be cooked) and layer half of them over meat sauce. Spread half of cottage cheese filling over pasta; sprinkle with half the mozzarella cheese. Repeat layers ending with remaining meat sauce. Sprinkle remaining 1/4 cup parmesan on top.

  6. Bake for 30-35 minutes until heated through.
