Sauteed vegies w/shrimp and brown jasmine rice.

Recipe Ingredients for LD made-up Thai

1 1/2 cups onion
2 cloves garlic
2 tbsp ginger
2 lbs sweet potato
1 lb eggplant
1 lb zucchini
1 cup low sodium chicken broth
1 tbsp low sodium soy sauce
1 tbsp fish sauce
1 tbsp lemon juice
1 tsp hot chili sauce

Recipe Directions for LD made-up Thai

  1. Saute onions then add garlic and ginger.

  2. Half boil potatoes in water.

  3. Add potatoes to onions.

  4. Add chopped eggplant and finally zucchini when eggplants begin to soften.

  5. combine soy sauce w/rest of ing and pour over mixture.

  6. garnish w/chipped chives and cilantro.

  7. Optional, serve w/shrimp.
