Recipe Ingredients for Lazy Ravioli

2 2/5 ounces lasagne noodles
2 eggs
4 ounces ham
3 ounces arugula
1/2 ounce parmesan cheese
1 tbsp butter
2 tbsp balsamic vinegar

Recipe Directions for Lazy Ravioli

  1. Heat two pasta dishes in the oven on very low.

  2. Bring a pot of water to a simmer. Meanwhile, heat butter in a small pan until it browns. Remove from heat and set aside.

  3. Slide the eggs gently into the simmering water. Cook until the whites are just set, remove and set aside.

  4. Bring the water to a boil and add the lasagne noodles. Cook until aldente, then remove, cut into serving pieces, and set aside.

  5. Place the arugula into a strainer and breifly dunk into the pasta water until the leaves just begin to wilt.

  6. Plate the lettuce first, then the pasta followed by the ham and eggs. Top with browned butter, parmesan, and balsamic vinegar.
