Stuffed Chicken Breasts with Feta and Spinach

Recipe Ingredients for Lazy Baked Greek Chicken

2 tablespoons olive oil
1/2 medium onion chopped
9 g 3.5 large cloves garlic, finely chopped
255 g 0zs. frozen spinach, thawed
1 dash salt
1 dash pepper
1 dash nutmeg
4 tablespoons Light Stick
3/4 cup Panko Breadcrumbs
3 tablespoons flaxseed meal
1/2 cup wheat bran
1 teaspoon dried oregano
1356 g 100% All Natural Chicken Breasts
3/4 cup crumbled feta cheese

Recipe Directions for Lazy Baked Greek Chicken

  1. Preheat oven to 425 degrees. Heat 1 Tbsp. olive oil. In a small skillet over medium heat, add onion and 2/3 of garlic and cook until softened, 3-4 minutes. Transfer to a bowl to cool, then add the spinach and season with salt, pepper and nutmeg. Melt the butter in the samej pan, turn off the heat and add panko, flaxseed meal and wheat bran, oregano and remaining garlic, toss.

  2. Drizzle a baking dish with the remaining oil. Split each chicken breast across but not all the way through and open like a book. Stuff the chicken with spinach and feta, letting the stuffing overflow to the edges. Place the chicken pieces in the baking dish and top with breadcrumb mixture. Bake until juices run clear.
