Oatmeal muffins made with sweetener and appleauce instead of sugar and oil

Recipe Ingredients for Layla's oil and sugar free muffins

225 g plain flour
16 tbsp splenda
1 tbsp baking powder
1 tsp bicarbonate of soda
2 tsp cinnamon
120 g oat bran
500 g buttermilk
100 g milk powder
3/4 cup unsweetened applesauce
2 eggs
175 g raisins
60 ml pineapple juice

Recipe Directions for Layla's oil and sugar free muffins

  1. soak raisins in juice (different dried fruit and juices can be used)

  2. mix dry ingredients in large bowl

  3. mix eggs, buttermilk, applesauce and splash of almond essence then add to dry mix, folding gently

  4. fold in raisins and juice, don't overmix

  5. spoon into muffin cups, spraying cups with 1 cal oil can make for easier eating, until near the top, these won't rise as much as normal muffins

  6. cook for 15-20 minutes at 190 degrees celsius

  7. cool on wire rack when done

  8. can be frozen in airtight container
