Lightened up enchiladas, done lasagna-style in the slow cooker.

Recipe Ingredients for Layered Slow-Cooker Enchiladas

3/4 cup enchilada sauce, green chile, mild
3/4 cup frozen corn
1/2 lb lean ground turkey
1/2 white onion
1/4 cup cheddar cheese, shredded
1/4 cup monterey jack cheese, shredded
3 white corn tortillas

Recipe Directions for Layered Slow-Cooker Enchiladas

  1. Dice the onion and saute over medium heat until tender and transparent. Add the ground turkey and cook over medium high heat until no longer pink.

  2. Add 1/3 of the meat mixture to a small slow cooker (I used a 2 quart). Top with 1/4 cup of frozen corn, 1/4 cup of the sauce, and 1/4 cup of cheese.

  3. Top with a tortilla, and repeat the process until you have three layers.

  4. To finish off the top tortilla, drizzle your remaining sauce and top with leftover cheese.

  5. Set your slow cooker to high and cook for about 3 hours (or low for 5-6).

  6. Garnish with whatever Mexican toppings you like, and enjoy!
