Recipe Ingredients for Layered Pumpkin Loaf

1 cup pumpkin
1 cup granulated sugar
2 tbsp granulated sugar
1/2 cup brown sugar
4 egg whites
1/2 cup skim milk
1/4 cup canola oil
2 cups flour
1 pkg light cream cheese

Recipe Directions for Layered Pumpkin Loaf

  1. Preheat oven to 350 degrees

  2. Grease loaf pan (9x5)

  3. Mix pumpkin, 1 cup sugar, brown sugar, 3 egg whites, milk and oil in a large bowl. Add flour, baking powder, pie spice and salt and stir until just moistened. Set aside.

  4. Beat cream cheese with 2 Tbsp sugar and one egg white until creamy.

  5. Spoon 1/2 of the pumpkin batter into loaf pan. Spread cream cheese mixture over pumpkin batter. Then add the rest of the pumpkin mixture on top of cream cheese mixture.

  6. Bake one hour or until toothpick interted in center comes out clean. Cook on wire rack.
