Recipe Ingredients for Layered Pumpkin Bars

1 cup whole wheat flour
1/2 cup rolled oats
1/2 cup brown sugar
3/4 cup butter
2 cups pumpkin puree
1 cup evaporated milk
4 egg whites
3/4 cup honey
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon allspice
3/4 cup slivered almonds

Recipe Directions for Layered Pumpkin Bars

  1. Stir together whole wheat flour, oats, and 1/4 cup brown sugar. Mix in 1/2 cup melted butter with a fork, as if in a crumb crust.

  2. Press into the bottom of a 9 X 13 greased pan and bake at 350 for 15 minutes.

  3. Mix pumpkin, milk, eggs, 1/4 cup brown sugar, 1/2 cup honey, spices. Pour over the pastry layer when it comes out of the oven, then bake for 20-30 minutes at 350 until center tests done with a knife.

  4. Remove from oven.

  5. Warm 1/4 cup butter and 1/4 cup honey. Then add nuts. Spread carefully over the top of the pumpkin layer and broil for a couple of minutes until toasted. Cut into squares.
