Layered Casserole Made in Slow Cooker

Recipe Ingredients for Layered Mexican Casserole

30 ounces hominy
15 ounces black beans
14 1/2 ounces diced tomatoes
1 cup salsa
6 ounces tomato paste
1/2 tsp cumin
3 flour tortillas
2 cups Monterey Jack Cheese
1/4 cup black olives

Recipe Directions for Layered Mexican Casserole

  1. Stir together hominy, beans, tomatoes, salsa, tomatoe paste and cumin

  2. Press one tortilla in bottom of slow cooker. Top with one third of mexiture and a layer of cheese. Repeat Layers. Press remaining layer on top. Top with remaining mixture.

  3. Cover and cook on low for 6 to 8 hours. Sprinkle remaining cheese on top and let sit for 5 minutes.

  4. Makes 6 servings
