Layered Enchiladas Recipe

Layered enchilada casserole with ground turkey and black beans.

Recipe Ingredients for Layered Enchiladas

20 oz enchilada sauce
12 flour tortillas
20 oz lean ground turkey
15 oz lower sodium black beans
2 c mexican cheese
2 tsp taco seasoning

Recipe Directions for Layered Enchiladas

  1. Preheat oven to 350.

  2. Rinse black beans.

  3. Brown ground turkey in large pan. Add taco seasoning and 1/2 C of enchilada sauce. Add black beans and mix well. Remove from heat.

  4. Grease 9x13 casserole dish.

  5. Dip tortillas in enchilada sauce and layer bottom of pan.

  6. Layer 1/2 meat and beans mixture on top of tortillas. Sprinkle 1/3 of cheese over meat and beans.

  7. Repeat tortilla layer and meat/bean/cheese layer. Finish with a 3rd layer of tortillas. Pour remaining enchilada sauce over the final layer of tortillas and cover with remaining cheese.

  8. Bake in oven @350 for 30 mins.
