Recipe Ingredients for Layered Enchilada Bake

1 lb Lean Ground Beef
1 large Onion, chopped
2 cups Salsa
19 oz Black Beans, (19oz)
1/4 cup Italian Dressing
2 tbsp Chili Powder
4 Flour Tortillas, 9inches
1/2 cup Sour Cream
1 cup Cheddar Cheese, shredded

Recipe Directions for Layered Enchilada Bake

  1. Line 2 9? cake pans with foil, enough to extend over the sides of the dish. Set aside. Brown meat with onion in a large skillet on medium-high heat; drain. Add salsa, beans, dressing and chili powder; mix well.

  2. Place a tortilla in the bottom of each dish. Between the two spread out the meat mixture, sour cream and cheese. Add another tortilla and repeat layers. Cover over with foil.

  3. Cook now: Pre-heat oven to 400. Bake covered for 30 min. Remove foil. Bake an additional 10 minutes or until casserole is heated through and cheese is melted. Let stand 5 minutes before serving.

  4. Cooke later: Free assembled uncooked casserole for up to 3 months. Preheat oven to 400. Bake covered for 1 hour. Remove foil. Bake an extra 15-20 minutes or until casserole is heated through and the cheese is melted. Let stand 5 minutes before serving.
