Recipe Ingredients for Layered Enchilada Bake

12 ounces ground beef
3/4 cup chopped onion
2 cups salsa
15 ounces black beans
2 T taco seasoning mix
2 cups masa flour
1 cup light sour cream
4 ounces mexican cheese

Recipe Directions for Layered Enchilada Bake

  1. Make corn tortillas with masa flour according to directions on bag

  2. Brown ground beef and onion, drain fat, add salsa, beans, and taco seasoning mix.

  3. Layer half the tortillas in a 9x13 inch pan, top with meat sauce, sour cream, and cheese. Repeat layers. Cover with foil and bake at 400 for 30 minutes. Remove foil and bake an additional 10 minutes.

  4. Let stand 5 minutes before serving. Top with shredded lettuce and tomatoes if desired.
