Easy prep vegetarian mexican casserole.

Recipe Ingredients for Layered Corn Tortilla, Bean and Cheese Casserole

14 oz canned diced stewed tomatoes, mexican style
1/2 cup chopped fresh cilantro, divided
2 tbs lime juice
6 6" Yellow Corn Tortillas
15 oz canned black beans, rinsed and drained
8 oz canned whole kernel corn, drained
8 oz Reduced Fat Mexican Blend Shredded Cheese

Recipe Directions for Layered Corn Tortilla, Bean and Cheese Casserole

  1. Combine tomatoes, 1/4 cup cilantro and lime juice in a small bowl and set aside.

  2. Tear corn tortillas in pieces and place 1/4 of them in bottom of greesed 8" square baking dish.

  3. Spoon 1/4 of tomatoe mixture over tortillas.

  4. Top with 1/4 each of beans, corn and cheese.

  5. Repeat layering 3 more times.

  6. Bake uncovered at 375 for 25 minutes or until cheese is melted and sauce is bubbly.

  7. Sprinkle with remaining Cilantro
