Recipe Ingredients for Layered blue potato, leek and zucchini slice

1 lb Potatoes
2 leeks
3 tbsp rosemary
1 cup cherry tomatoes
1 zucchini
2 cloves garlic
1/2 cup kalamata olives
1/4 cup olive oil

Recipe Directions for Layered blue potato, leek and zucchini slice

  1. Preheat the oven to 375F

  2. Thinly slice the potatoes and leeks. Cut to the zucchini into 1/4 inch slices. Halve the cherry tomatoes. Pit and chop the olives.

  3. Warm half the olive oil, add the leeks and 2 sprigs of rosemary and cook until the leeks are lightly browned, season with salt and pepper.

  4. In a shallow baking dish, make a layer using half the potatoes, then add the leeks, layer the zucchini, tomatoes, garlic and olives. Finish with the potato layer.

  5. Season with salt and pepper and cover the top with the remaining sprig of rosemary. Drizzle with the remaining oil and bake covered for 30mins, then remove the cover and bake until browned and tender and the liquid has evaporated.

  6. Allow it to rest and set, serve warm or at room temperature.
