The absolute BEST oatmeal raisin cookie you will ever eat! This recipe is for regular sized cookies but I use 1 1/2 scoops (3 tbsp) of dough and get 26 jumbo cookies at 207 calories each.

Recipe Ingredients for Lauri's AWESOME Jumbo Oatmeal Raisin Cookies

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup unsalted butter
1 cup sugar
1 cup dark brown sugar
2 large eggs
2 tsp vanilla flavoring
3 cups oatmeal
1 cup raisins

Recipe Directions for Lauri's AWESOME Jumbo Oatmeal Raisin Cookies

  1. Whisk dry ingredients together and set aside.

  2. Combine wet ingredients (butter, sugars, eggs, vanilla). Beat and increase speed until light and fluffy.

  3. Stir in flour mixture just until combined - do not overmix.

  4. Add oats and raisins and stir to incorporate evenly.

  5. Fill # 2 cookie dough scoop (2 tbsp) with dough and scrape against side of bowl while pulling up to level and pack dough.

  6. Drop 2" apart onto baking sheet lined with parchment paper or non-stick spray.

  7. Bake 11-13 minutes on center rack until golden but still moistened beneath cracks on top.

  8. Remove from oven and let cool on baking sheet for at least 2 minutes before transporting to cooling rack.

  9. I use 1 1/2 scoops for jumbo cookies (3 tbsp.) and bake for 15 minutes.
