Lauren's Meballs Recipe

The oatmeal is the quick cook kind and for the stewed tomatoes, I use Muir Glen Crushed tomatoes. You can use whole milk (I just listed skim to bring down the calorie count for us).

Recipe Ingredients for Lauren's MeBalls

1 1/2 pound extra lean ground beef
3/4 cup uncooked oatmeal
1 egg
1/2 cup skim milk
3/4 cup onions
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon oregano
28 ounces stewed tomatoes
1 tsp olive oil
1 clove garlic

Recipe Directions for Lauren's MeBalls

Mix beef, oatmeal, egg, skim milk, 1/4 c chopped onions, salt, pepper, 1/4 tsp oregano together. Form meatballs. Brown meatballs, turning them to brown on all sides. While meatballs are browning, in large pot, place olive oil and saute' remaining onions and garlic. Add crushed tomatoes, and remaining seasonings. Transfer browned meatballs to the pot with the sauce and bring to a boil. Turn heat on med-low and continue to cook for 30 minutes. Serve over rice or pasta or make MeBall sandwiches.
