A thin broth soup with lots of hearty course chopped veggies, chunky bits of lean chicken and lightly seasoned with salt and pepper. Tastes like your grams chicken soup minus the egg noodles.

Recipe Ingredients for Lauren's Homemade Chunky Chicken and Veggie Soup

2 ounce Chicken Breast
6 ounce low sodium Chicken Broth
1 scallion, diced
1 medium mushroom, sliced
1/6 yellow onion, chopped
1/2 cup carrot, shredded
1/2 cup broccoli, chopped & steamed
1 1/2 cup water
1 Salt and Pepper, to taste

Recipe Directions for Lauren's Homemade Chunky Chicken and Veggie Soup

  1. Coarsely chop broccoli and steam it in your microwave till bright green and still semi crisp.

  2. In a skillet, cook your chicken till mostly done (no pink, white outsides) and set aside.

  3. In a small to medium soup pan/pot, add the 1 can of low sodium/ low fat chicken broth and 1 can of water. Stir and place pan over medium flame and bring to a simmer.

  4. Prepare your veggies. Dice your scallion (White and part of the white/green section), cut the yellow onion into large chunks, and put into gently bubbling pan of broth/water with the sliced mushroom, 1/2 cup shredded carrot, and steamed chopped broccoli.

  5. Shred or cut the prepared chicken into bite sized chunks and add to broth. Season with salt and pepper (to personal tastes) and let everything simmer (stirring occasionally) till mushroom and onion is tender and chicken is throughly done (about 10/15 mins -- Times vary. Use best judgement).

  6. Spoon into a bowl, garnish with the remaining diced scallion greens and extra pepper if needed.
