Fresh Garlic and Chicken wok fried till golden with a melody of fresh veggies and seasoned with soy sauce and red pepper flakes.

Recipe Ingredients for Lauren's Garlic Chicken & Veggie Stir Fry

6 ounce Chicken Breast, lean
3 scallions, diced
1/4 large onion, chopped
4 cloves garlic, sliced
4 medium mushrooms, sliced
1/2 cup bean sprouts
3/4 cup Pea Pod
2 tbsp olive oil
2 tbsp lite soy sauce
2 tsp red pepper

Recipe Directions for Lauren's Garlic Chicken & Veggie Stir Fry

  1. Bring a pot of boiling water to boil and add pea pods. Simmer over medium heat for 2 or 3 mins, remove peas from pot and place in bowl of ice water.

  2. Cut 1 6-ounce chicken breast into bite sized chunks.

  3. Chop/Slice/Dice all remaining veggies (Slice mushrooms, dice scallions -- white and white/green parts, chop onion, slice garlic)

  4. Heat a wok with 2 tbsp olive oil (to coat the pan), season pan with black pepper (optional) and when wok is sufficiently hot, add chicken and garlic till chicken turns opaque and garlic is golden.

  5. Add mushrooms, scallions, pea pods, and onion. Add water to wok if necessary. Don't burn your veggies. When mushrooms are almost tender, add bean sprouts.

  6. When all veggies are tender, add 2 tbsp of lite soy sauce and red pepper flakes. Stir to combine. There should be no liquid in bottom of pan.

  7. Top with diced scallion greens. Serve and Enjoy!
