Recipe Ingredients for Laurel's Potato Cheese Soup

4 cups Sliced, Boiled
2 cup Vegetable Stock
2 tsp Salt, Table
1 small Onions
1 tbsp Olive Oil
5 sprigs Parsley
3 cup Whole Milk
1 cup, shredded Cheddar Cheese
2 tbsp Unbelievably Better Butter
1/4 tsp Pepper, Black
1/4 tsp Garlic Powder

Recipe Directions for Laurel's Potato Cheese Soup

  1. Cook the potatoes in water with salt until tender. Reserve cooking water.

  2. Saute the onion in oil until soft. Place some of the potatoes, potato water, onion & parsley in a blender no more than half full & puree until all the potatoes are smooth.

  3. Return the potato mixture to the pot & add the milk. Stirring continuously, add the cheese, butter & seasonings. Heat until cheese is melted & the soup is hot, but do not boil. Thin with additional stock if necessary & adjust seasonings.
