Lo-fat, lo-sugar zucchini bread - moist and yummy!

Recipe Ingredients for Laura's Zucchini Bread

2 eggs
1/2 cup applesauce
1/2 cup vegetable oil
1 1/2 cups sugar
2 cups zucchini, grated
2 tsp vanilla extract
3 cups flour
4 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 cup walnuts, chopped

Recipe Directions for Laura's Zucchini Bread

  1. Preheat oven to 325

  2. Grease and flour two 8x4 inch loaf pans

  3. in large bowl, beat eggs until light and frothy

  4. Mix in oil, applesauce and sugar

  5. Stir in grated zucchini and vanilla

  6. Combine flour, cinnamon, soda, baking powder, salt and nuts

  7. Stir into egg mixture

  8. Divide batter into prepared pans

  9. Bake for 60-70 minutes, or until done
