Vegetarian Friendly Vegetable soup

Recipe Ingredients for Laura's Vegetable Soup

3 carrots
1 cup celery
3 tablespoons extra virgin olive oil
5 potatoes
1 1/2 onion
1 1/2 cup diced tomatoes
6 cups vegetable broth
1 clove garlic
1/4 cup red peppers
1 zuchinni
1/4 cup corn
1/4 cup peas
1/2 cup black beans

Recipe Directions for Laura's Vegetable Soup

Sautee diced celery and onion in the olive oil til tender. Add minced garlic and sautee briefly. Add rest of ingredients and salt & pepper to taste. Heat to boiling, then simmer for about 30 minutes, or until all vegetables are tender.
