A breakfast burrito complete with egg, bell pepper, cheese, onion and flour tortilla.

Recipe Ingredients for Laura's breakfast burrito

1/2 cup chopped green bell pepper
1/2 cup chopped lean ham
1/2 cup shredded cheddar cheese
1/2 cup onion
2 eggs
1 flour tortilla

Recipe Directions for Laura's breakfast burrito

  1. Chop 1/2 each of fresh onion, bell pepper, and lean ham.

  2. Scramble 2 eggs in separate container.

  3. Spray bottom of small skillet with Pam cooking spray, saute' vegetables until desired softness.

  4. Spray bottom of another skillet with Pam and scramble eggs. Add cheese to top of eggs to melt.

  5. Warm flour tortilla in microwave and add mixture of eggs and vegetables to desired fullness.
