Recipe Ingredients for Laura

2 cups onions, chopped
3 tsp garlic cloves, minced
2 lb ground beef
2 cup tomatoes, peeled and diced (14.5 ounce can)
3 1/2 tbsp chili powder
1 tbsp cumin seeds
1 tsp oregano
1 tsp cayenne pepper
1 cup beer, dark
1 cup coffee, strong brewed (12 fluid ounce)
2 cups tomato paste (2, 6 ounce cans)
2 cups beef broth (14 ounce can)
1/2 cup brown sugar
1 tsp coriander, ground
1 tsp salt
4 cups kidney beans
4 tbsp peppers, hot chile, seeded and chopped

Recipe Directions for Laura

  1. Recipe also calls for 1 tbsp cocoa but I couldn't get the program to accept it.

  2. Heat oil in a large saucepan over medium heat. Cook ionions, garlic, ground beef in oil for 10 minutes or until the meat is well browned and the onions are tender.

  3. Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, 1 tbsp cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in the beans and hot chile peppers. Reduce heat to low and simmer for 1 1/2 hours.

  4. Stir in the remaining beans and simmer for another 30 minutes.
