A spicy and healthy chili. It's thick and meatless, but very hearty and satisfying--tasty, too!

Recipe Ingredients for Laura B.'s Vegetarian, Two-Bean Chili with Elbow Pasta

1 large can (28 oz.) Simply Nature Organic Diced Tomatoes
1 can (14.5 oz.) serving Happy Harvest Stewed Tomatoes
1 can (6 oz.) Happy Harvest brand Tomato Paste
1 can (15 oz.) Eden Organic Black Soy Beans
1 cup, chopped Onions
2 cloves, raw Garlic
1 tbsp Hershey's Unsweetened Cocoa
1 cup dry (Goya brand) Central American Red Beans
98 g (1 cup) Elbow Pasta, (Barilla Plus brand), Dry
3 tsp Domino Light Brown Sugar
1/4 tsp Basil Leaves
1/4 tsp Oregano Leaves
3/4 tsp Cumin
1/2 tsp Chili Powder
1/2 tsp. Smoked Paprika

Recipe Directions for Laura B.'s Vegetarian, Two-Bean Chili with Elbow Pasta

  1. Sort, soak and cook the red beans until tender. In separate pan or slow cooker, mix together the diced tomatoes, canned stewed tomatoes, brown sugar, cocoa and and half of the spices. Hold back on the salt until the chili is almost done. Use a blender to make the mixture smooth.

  2. Add in chopped onion and garlic. Blend,if desired, or leave the onion in chopped form.

  3. Allow the sauce to simmer as the beans cook.

  4. When beans are tender, open the can of black soybeans and add to the red beans. Stir in 3/4 tsp baking soda and let the foam dissipate.

  5. In a large pot, stir the beans and tomato sauce together. Measure and stir in 1 cup of Barilla Plus brand elbow pasta. Bring to a simmering boil and cover, letting the pasta cook. (Or, alternatively, you can cook ad drain the pasta separately, according to package directions.)

  6. Last of all, add a pinch or two of salt (sea salt is good, or seasoned salt. Salt may be omitted, if desired.)

  7. Simmer until all flavors are blended and pasta is "al-dente". Serve with corn-bread, a green salad and (if desired) oyster crackers.

  8. It makes a hearty meal!
