A yummy light version of the ever popular Italian Wedding Soup. This recipe uses ground turkey instead of beef and pork to make the mini meatballs.

Recipe Ingredients for Launi's Italian Wedding Soup - Light

1 small onion, grated
3 T. parsley, dried
1 t. garlic, minced
1 c. bread crumbs
1 lb. turkey, ground, fat free
4 c. chicken broth, fat free, low sodium
4 c. water
1/3 c. spinach, chopped, frozen
1 eggs
2 T. Parmesan cheese, grated

Recipe Directions for Launi's Italian Wedding Soup - Light

  1. to make the meat balls: Stir the first 5 ingredients together in a large bowl. Using 1 1/2 t. of the mixture for each, roll into balls and place on a parchment lined baking sheet. Bake are 350 degrees F. for 25 minutes or until done through. Set aside.

  2. For the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and the spinach. Whisk the eggs and the Parmesan cheese together and drizzle into the boiling broth while stirring broth in a circular motion. This creates thin strands of egg. Season the soup to taste with salt and pepper if desired.
