Recipe Ingredients for Latvian Potatoes

8 potato (2-1/2" dia, sphere) Potatoes, Boiled, Cooked In Skin, Flesh
1 large Onions
4 oz Economy Sliced Bacon
2 cup Cottage Cheese Small Curd Grade A Pasteurized Dairy
4 tbsp Salted Butter

Recipe Directions for Latvian Potatoes

  1. Boil potatoes until soft

  2. 5 min before potatoes are done sautee bacon and onions in 1 tbsp olive oil

  3. place 1 potatoe in bowl, mash with fork. Top wit 2 tbsp sauteed onions and bacon, 1/4 cup cottage cheese, 1/2 tbsp butter.
