Traditional style served with sour cream and chives or applesauce.

Recipe Ingredients for Latkes

2 cups potatoes, peeled and shredded
2 tablespoon grated onion
1 eggs, beaten
2 tablespoons all-purpose flour
1/2 tsp salt
1/8 cup extra virgin olive oil (This is listed this way for calorie counting purposes. Use 1/2 cup extra virgin olive oil for frying)

Recipe Directions for Latkes

  1. Place a large skillet over medium-high heat and heat oil.

  2. In a medium bowl mix the potatoes, onion, egg, flour and salt together.

  3. Make sure oil is hot by taking a small pinch of the mixture. If it bubbles, it's hot enough.

  4. Place 1/4 cup of the potato mixture into the hot oil and press down to flatten to 1/4 inch patties.

  5. Brown on one side, then flip. Once both sides are brown, drain on paper towels and eat hot.
