Recipe Ingredients for Latino Pork Fried Rice

4 cups brown rice
1/2 teaspoon coriander (whole)
1/2 teaspoon cumin (whole)
1 red pepper
1 green pepper
1 yellow pepper
2 large onions
4 cloves garlic
1/2 pound ground pork
1 teaspoon salt
1 teaspoon extra virgin olive oil
8 cups water

Recipe Directions for Latino Pork Fried Rice

  1. Crush coriander and cumin and set aside

  2. Chop onions, garlic, and peppers

  3. Put oil in bottom of stock pot on medium heat

  4. Once oil is hot, add chopped vegetables, cumin, coriander, salt, and uncooked rice to the stock pot and cook until the rice is browned

  5. Add water and bring to a boil

  6. Once water is boiling, cover and cook on medium low heat until the water is absorbed by the rice

  7. Serve with side salad
