Latin Style Chicken and Rice Recipe

One pot chicken and rice with veggies

Recipe Ingredients for Latin style chicken and rice

6 cloves garlic, minced
3/4 tsp oregano, dried
2 tbsp cider vinegar
2 pounds chicken thighs, trimmed of skin and fat
2 tbsp olive oil
1 onion, chopped
1/2 green pepper, chopped
1/2 tsp red pepper flakes
1/4 cup cilantro, minced
8 ounces tomato sauce
2 cups low sodium chicken broth
3 cups long grain white rice
1/2 cup olives, green
1 tbsp capers
1/2 cup roasted red peppers, cut in 1/4 inch by 2 inch strips

Recipe Directions for Latin style chicken and rice

  1. Marinate chicken in 6 cloves garlic, 1 tsp salt, oregano and 2 tbsp vinegar. 15 minutes

  2. Add half onion, green pepper and 2 tbsp cilantro in each of two dutch ovens.4 minutes

  3. Add chicken skin side down and brown turn and brown other.

  4. Join chicken and onion mixture into one large pot

  5. Add tomato sauce chicken broth and saute' 20 minutes

  6. Add rice, olives, and capers and mix to blend

  7. place in preheated 350 degree oven for 10 minutes. Remove from oven and stir from bottom to top. Return to oven repeat after 10 minutes.

  8. Remove chicken from pot. discard skin and bone.

  9. Mix chicken with roasted red pepper, more cilantro and 2 tsp vinegar, return to rice
