Come fall, I'm left with tomatoes that haven't riped on the vine. I let them ripen inside and then roast them to bring out their flavor.

Recipe Ingredients for Late Harvest Roasted Tomato Sauce

2 3/4 lbs tomatoes, seeded
1/2 cup extra virgin olive oil
1 onion, quartered
1 carrot, quartered
1 celery stalk, halved
8 cloves garlic, unpeeled
1 tbsp fresh thyme
1/2 tsp salt
1/2 tsp red pepper flake
1/4 tsp ground black pepper

Recipe Directions for Late Harvest Roasted Tomato Sauce

  1. Combine all ingredients on a lined baking sheet. Roast at 450 degrees for an hour, stirring occasionally.

  2. Remove from the oven and let cool slightly. Peel garlic cloves. Process all roasted veggies through a food mill or processor. Place in sauce pan to reheat and adjust seasoning as needed. Sugar may be added to reduce acid if needed.
