Recipe Ingredients for Lasagne

500 g beef mince steak lean
1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, stick finely chopped
400 g chopped tomatoes
1 stock cube, 300ml hot beef stock
2 tsp herbs, Italian
250 g spinach, washed
40 g plain flour
400 ml semi-skimmed milk
1 tsp mustard , to season
100 g cheese, grated (use 140g low low cheddar)
200 g sheets lasagne
30 g Parmesan Cheese

Recipe Directions for Lasagne

  1. In a large pan, brown the mince in batches, pressing it down and chopping it up into bits with the back of a wooden spoon as it starts to colour. Set aside.

  2. Cook the onion, carrot and celery stick. Cook for 15min until softened and started to turn golden.

  3. Add the mince, chopped tomatoes, beef stock and bay leaves. Season well.

  4. Cover and bring to the boil, then remove the lid and simmer for 1hr until the sauce has reduced and thickened.

  5. Cook the spinach in a separate pan until just wilted.

  6. Mix the flour with a little milk

  7. Heat the remainder of the milk

  8. Add the milk slowly, stirring all the time to make a sauce. Cook for 1-2min. Season with salt and pepper

  9. When the sauce has thickened add the cheese and French mustard.

  10. Preheat the oven to 190C (170C fan oven) or gas mark

  11. Put half the meat sauce in the bottom of an ovenproof dish measuring around 28cm x 19.5cm.

  12. Top with a third of the spinach, the lasagne sheets, half the cheese sauce.

  13. Repeat with the remaining meat sauce, spinach, lasagne sheetsand cheese sauce

  14. Cook in the oven for 30-40min until hot all the way through.
