Wholesome veggies & meat lasagne

Recipe Ingredients for Lasagne

500 g Light Ricotta Cheese
500 g frozen spinach
2 eggs
60 g Parmesan
280 g Lasagne Sheets
2 onions
4 g nutmeg
800 g eggplant
12 g garlic
440 g Beef
800 g crushed tomatoes
600 g chopped tomatoes
500 g zucchini
280 g carrot

Recipe Directions for Lasagne

  1. Mix ricotta, spinach, egg, nutmeg and half the Parmesan in a bowl

  2. Season with pepper

  3. Cook onions eggplant and garlic until soft

  4. Add mince and cook until browned

  5. Add canned tomatoes, chopped tomato, zucchini and carrot and simmer until cooked down

  6. Spread a thin layer of meat over base of lasagne dish

  7. Top with lasagne sheet

  8. Spread with half remaining meat mixture

  9. Top with another lasagne sheet

  10. Spread remaining meat mixture

  11. Top with another lasagne sheet

  12. Spread over ricotta mixture

  13. Sprinkle with Parmesan

  14. Bake for 50 mins on 160c or until golden
