Lasagna with Veggies Recipe

I made 2 lasagna's by using the smallest little bread pans. I used 2 no bake lasagna noodles and broke them into 4 pieces each.

Recipe Ingredients for Lasagna with veggies

33 g barilla lasagna noodle
1/2 cup low fat cottage cheese
1 egg white
1 clove garlic
1/4 cup zucchini
1/4 cup yellow squash
2 mushrooms
2 tbsp onion
2 tbsp red pepper
1 tbsp grated Parmesan & roman cheese
1/2 cup part skim mozzarella
1 cup spaghetti sauce with meat

Recipe Directions for Lasagna with veggies

  1. Chop and Saute veggies. ( I used a little water)

  2. put cottage cheese, egg white, parmesan cheese and some italian seasonings in the food processor. Whiz for a few minutes.

  3. Layer the sauce, noodles, veggies, and cheese - alternating.

  4. Bake covered for 30 minutes at 375*
