I use whole wheat noodles and reduced fat cheese. Also good with soy sausage crumbles.

Recipe Ingredients for Lasagna, vegetarian crumbles

8 oz pasta, (9 lasagna noodles)
12 oz. Morningstar Farms Meal Starters Grillers Recipe Crumbles - Meal Starters
2 cloves garlic, finely chopped
25 1/2 oz pasta sauce
1/8 teaspoon cayenne pepper
1 1/2 teaspoons dried basil leaves
1 egg
15 oz reduced-fat ricotta cheese
2 cups shredded reduced-fat mozzarella cheese
1/3 cup shredded Parmesan cheese

Recipe Directions for Lasagna, vegetarian crumbles

  1. Heat oven to 350F

  2. Spray 13x9-inch (3-quart) glass baking dish with cooking spray

  3. Cook and drain noodles as directed on package and place in cold water

  4. Cook crumbles and garlic in skillet 5 to 7 minutes

  5. Stir in pasta sauce, ground red pepper and 1 teaspoon of the basil

  6. Beat egg slightly and stir in ricotta cheese and remaining basil until blended

  7. Spread about 1/2 cup sauce mixture over bottom of baking dish

  8. Top with 3 noodles, 1 1/2 cups of the sauce mixture, half of the ricotta mixture and 3/4 cup of the mozzarella cheese

  9. Repeat layers once

  10. Top with remaining noodles, sauce and mozzarella cheese; sprinkle with Parmesan cheese

  11. Spray 15-inch piece of foil with cooking spray and cover lasagna

  12. Bake 45 minutes covered

  13. Uncover; bake 10 to 15 minutes longer or until bubbly

  14. Let stand 10 minutes before serving

  15. High Altitude (3500-6500 ft): In step 4, uncover and bake 15 to 20 minutes longer.
