Assemble lasagna as you normally would, just replacing zucchini ribbons for pasta.

Recipe Ingredients for Lasagna using zucchini ribbons as noodles

8 oz part skim ricotta
2 zucchini
8 oz mushrooms
16 oz Traditional Pasta Sauce
1 cup cheddar cheese
1 cup onion
1 cup spinach
1 cup egg substitute
8 oz g) cooked 97% fat free ground meat

Recipe Directions for Lasagna using zucchini ribbons as noodles

  1. Peel zucchini a little, then use that spot to make ribbons

  2. Saute onions and spinach together, lightly set aside for assembly

  3. saute mushrooms lightly (or used canned), set aside for assembly

  4. mix 8 oz of low fat ricotta, 1 cup of egg sub, and sprinkle in basil and oregano. Set aside for assembly.

  5. Cook ground meat thoroughly and rinse. Set aside for assembly.

  6. Assemble in layers, ribbons, onions and spinach, a little cheese, ribbons, then ground meat, ribbons, then ricotta mixture, then ribbons, then the rest of the mushrooms, spinach, and onions.

  7. Bake in 350 oven, 50 minutes covered, 25 minutes uncovered to evaporate a little bit of the liquid that will form.
