You can substitute one shallot for the onion and italian turkey sausage for the regular turkey.

Recipe Ingredients for Lasagna for two

2 oz lasagna noodles
1 1/2 tsp. olive oil
1/2 tsp chopped garlic
1/4 cup chopped onion
4 oz ground turkey
1/2 tsp. salt
3 oz tomato paste
1 tbs. parmesan cheese
2 tbs. Egg Beaters
1/2 cup light cottage cheese
2 oz light mozzarella cheese
1 pinch of pepper
1/8 tsp. basil
1 tsp parsley
6 tbs. of hot water

Recipe Directions for Lasagna for two

  1. Boil noodles using package directions.

  2. In oil, sauté onion, and garlic.

  3. Add turkey and brown

  4. Add tomato paste, seasonings, and water.

  5. In a bowl mix together the cottage cheese and egg beaters.

  6. Layer half the noodles, turkey and sauce, and cheese mixture. Then repeat

  7. Sprinkle the top with the parmesan cheese and bake at 350 degrees for 30 minutes.
