Lasagna Rolls Recipe

Great low calorie option when you have the craving for lasagna! Taken from Cooking Light cook book.

Recipe Ingredients for Lasagna Rolls


Lasagna:
7 ounces lasagna noodles (8 noodles)
4 teaspoons olive oil
1/2 cup onion, chopped fine
8 ounces of sliced mushrooms
6 ounces of baby spinach
3 cloves garlic, minced
2 ounces shredded mozzarella
1/2 cup part-skim ricotta cheese
2 tablespoons fresh basil, minced
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Rosted Red Pepper Sauce:
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, minced
14 1/2 ounce can diced tomatoes, with liquid
7 ounce roasted red peppers, with liquid
1/8 teaspoon crushed red pepper flakes

Topping:
2 tablespoons fresh basil, minced

Recipe Directions for Lasagna Rolls

  1. Cook noodles as instructed on package.

  2. Heat oil in a large nonstick skillet over medum high-heat. Add onion, mushrooms, spinach, and 3 garlic cloves, saute 5 minutes.

  3. Remove fromheat and stir in cheese and next 3 ingredients.

  4. SAUCE:

  5. Combine all Red Pepper Sauce Ingredients in blender and blend until smooth.

  6. Place cooked noodles on a flat surface and spread 1/4 cup of cheese mixture over each noodle.

  7. Roll up noodles, jelly-roll fashion, starting with short side.

  8. Place rolls, seam side down, in a shallow 2-quart dish.

  9. Bake, uncovered, 20 minutes at 350 degrees.

  10. Sprinkle remaining fresh basil over top and serve.
