Rosedale's zucchini noodles - pretty good!

Recipe Ingredients for lasagna

3 large zucchini
1 tbsp olive oil
1/4 cup parmesan cheese
1/2 cup feta cheese
1/2 cup light cream cheese
1 egg
1/2 cup parsley
2 cups spinach
2 tomatoes

Recipe Directions for lasagna

  1. Preheat oven to 400

  2. Slice zucchini lengthwise, toss in olive oil and roast on greased baking sheets for 15 minutes.

  3. Reduce heat to 350

  4. Mix cheeses, egg, parsley, spinach

  5. Place a layer of zucchini, then spread a thin layer of cheese mixture, cover with thinly sliced tomatoes. Repeat layer and finish with layer of zucchini. Sprinkle with parmesan and bake, covered for 40 minutes
