Beef, Bison & Spinach Lasagna

Recipe Ingredients for Lasagna

1/2 pound lean ground beef
1 pound ground bison
1 1/2 onions, chopped
2 cloves garlic, minced
28 fl.oz. can tomatoes
7 oz can tomato sauce
5 1/2 oz.can tomato paste
1 tsp (10ml) dried basil
1 tsp (10ml) dried oregano
1 tbsp (15ml) fresh parsley, chopped
250 grams cottage cheese, 1%
1/8 cup (50 gm) parmesan cheese, light
1 Chopped parsley leaves
1
1 tsp (10ml) dried oregano
1 egg, beaten with
1/4 cup milk 1%
300 gram package frozen spinach, thawed and drained
300 grams Mozzarella cheese, grated
1/8 cup (50 gm) parmesan cheese, light
10 whole wheat lasagna noodles, cooked

Recipe Directions for Lasagna

  1. Cook ground beef & bison in a little olive oil, add onions and garlic and continue to cook until meat is browned and onion is tender.

  2. Drain off all fat.

  3. Add drained tomatoes and mix well, cutting tomatoes into chunks with spoon.

  4. Stir in tomato sauce and paste, parsley, oregano, basil and salt and pepper to taste, bring to a boil.

  5. Stir occasionally and simmer on low heat for 45 minutes, uncovered until reasonably thick.

  6. Preheat oven to 350F or 180C.

  7. Mix cottage cheese, 1/8 cup parmesan cheese, chopped parsley and oregano in a bowl.

  8. Add egg and milk mixture and stir well.

  9. Set aside.

  10. Be sure to reserve 1 cup of meat sauce for final topping.

  11. In un-greased large (approx 30cm x 40cm x 5cm) lasagna pan, layer noodles, followed by some meat sauce, then mozzarella cheese, more noodles, then spinach, then ricotta cheese mixture, more noodles, etc.

  12. Continue to add layers ending with a layer of noodles.

  13. Spread remaining meat sauce over this layer and sprinkle with parmesan cheese.

  14. Bake, uncovered for 45 - 60 minutes.

  15. Allow to cool for 10 minutes before serving.
