Easy and good, great for keeping overnight and baking the next day. Cottage cheese makes a quick, easy, and healthy bechemel layer.

Recipe Ingredients for Lasagna

1/2 pound lasagna noodles (12)
28 ounces tomato sauce (1 can Dei Fratelli brand)
1 can tomato paste
1 cup chopped green pepper
1 cup chopped onion
2 tbl garlic
1 tbl basil
1/2 tsp cayenne pepper
1 lb hamburger
2 cups cottage cheese
2 cups chopped spinach
1 cup grated carrot
1 tsp garlic
1/4 cup parmesan cheese
1 egg, beaten
2 tsps basil (or mixed Italian seasoning)
1 pound shredded mozarella cheese

Recipe Directions for Lasagna

  1. Cook lasagna noodles according to package directions and drain. Set aside.

  2. Make sauce: combine sauce, paste, pepper, onions, garlic, basil, cayenne pepper, and hamburger. Simmer 15 - 20 minutes or until peppers and onions have softened. Set aside

  3. Thoroughly combine cottage cheese, spinach, carrot, garlic, parmesan cheese, egg, and basil. Divide in half.

  4. To assemble: spray a 9 x 13 pan with cooking spray and spread about 1/3 cup sauce in the bottom. Lay three lasagna lengthwise over it. Spread enough sauce over noodles to just cover. Dot with half the cottage cheese mixture and spread to evenly cover. Top with another layer of noodles, followed by a thicker layer of sauce. Sprinkle with half the mozarella cheese and top with another layer of noodles and sauce. Repeat the first layer. Repeat the second layer for the fourth and last layer.

  5. Bake at 350 for 45 minutes to 1 hour or until lasagna is bubbly and the cheese is browned. Check the center to make sure it's hot and cover with aluminum foil if necessary to keep the cheese from getting too brown (usually only necessary if the lasagna's been refrigerated and then baked).

  6. Let stand 10 - 15 minutes before cutting and serving.
