Vegan lasagna - no precooking the noodles.

Recipe Ingredients for Lasagna

207 g whole wheat lasagna
8 ounces baby bella mushrooms, sliced
1 tsp garlic, minced
2 tbsp water
50 .5-ounce) jars sauce
10 ounces frozen spinach, chopped
14 ounces firm tofu
2 tbsp nutritional yeast
1 1/2 tsp oregano, dried
1/4 tsp garlic powder
1 tsp basil, dried
1/2 tsp rosemary, dried
1/8 tsp cayenne pepper
2 medium carrots, chopped
7 ounces sausage
1/2 tbsp olive oil

Recipe Directions for Lasagna

  1. Preheat oven to 375.

  2. Saute sliced mushrooms and garlic in water. Cover to keep tender.

  3. Remove from heat and add sauce.

  4. Pan fry sausage in oil.

  5. Put all ingredients in food processor and blend until smooth.

  6. Spread half the sauce in the bottom of a 9x12 pan.

  7. Lay 3 noodles.

  8. Spread half the filling over the noodles.

  9. Lay 3 more noodles.

  10. Spread the rest of the filling over the noodles.

  11. Lay the last 3 noodles.

  12. Cover with the rest of the sauce.

  13. Cover tightly with foil and bake 30 minutes.

  14. Remove foil and bake 30 more minutes.

  15. Lasagna cuts better if it sits 15 minutes.
