This is a recipe passed down from my Italian grandmother, although I have tweaked it a little bit...but still absolutely delicious!

Recipe Ingredients for Lasagna

1 tsp olive oil
1/2 c onion, diced
1/2 c red pepper, diced
8 oz baby Bella mushrooms, diced
1 lb lean ground beef
4 cloves garlic, minced
1/4 tsp oregano
1/4 tsp thyme
1/4 tsp rosemary
1/4 tsp nutmeg
1/4 tsp basil
1/2 tsp parsley
1 T Splenda
15 oz can diced tomatoes (I prefer petite diced)
15 oz can tomato sauce
4 oz tomato paste
15 oz water
8 oz frozen chopped spinach, dethawed and drained
1 lb mozzarella cheese
1 lb whole wheat lasagna noodles
1/4 c Parmesan cheese

Recipe Directions for Lasagna

  1. Heat a large sauce pan or stock pot on med high heat for two minutes. Add olive oil, wait thirty seconds to a minute until oil is hot. Add onions, mushrooms and red peppers. Sautée until translucent and most of the liquid is cooked out of the mushrooms (about 5 minutes) then add ground beef. Once the meat starts to brown, reduce heat to medium and add garlic and spices, including Splenda. Once you can smell the spices add the can of diced tomatoes. Again, cook until almost all the liquid is gone (about 15 minutes). Add the tomato sauce, paste and water. Combine, season with salt and pepper.

  2. and simmer for about 20 - 30 minutes. At this point you need to start your water for the noodles.

  3. Preheat oven to 325. Once the sauce is done, put a ladle full in the bottom of a 13 x 9 baking dish, spreading it out evenly. This prevents the noodles from sticking to the bottom of the dish. You are now ready to start the layering process. On top of the noodles, add at a third of the spinach, followed by a layer of sauce and then mozzarella cheese. Start the layering process over (sauce, spinach, cheese, noodle) making sure than the last layer is cheese. Put dish in the oven and bake until cheese is bubbly and golden brown. Sprinkle each serving with grated Parmesan cheese.
