Homemade Lasagna. You can easily substitute the fat free ricotta and fat free cottage cheese and fat free mozzarella and use the whole grain noodles in place of the regular lasagna noodle. It's a great recipe! I do substitute these items when the kids are gone :)

Recipe Ingredients for Lasagna

16 oz. whole milk ricotta cheese
24 oz. large curd cottage cheese
4 c. mozzarella cheese
2 eggs
1 can tomato soup
2 cans tomato paste
2 1/2 pounds hamburger (cooked and drained)
4 oz. noodles
1 onion
1 c. parmesean cheese

Recipe Directions for Lasagna

  1. Brown hamburger. Add seasoning to taste. Drain.

  2. Cook noodles halfway (5-6 min)

  3. In a bowl mix ricotta, cottage and parmesean cheese with 2 eggs.

  4. Add soup and tomato paste to browned hamburger.

  5. In a lasagna pan layer: 3 noodles, filling, meat and 2c. of mozzarella cheese. Repeat the layers once more.

  6. Bake at 350 degrees for 30 minutes or until the top layer of cheese begins to brown and bubble.

  7. After baking let it rest for about 10 - 15 minutes before slicing.

  8. One serving is the pan sliced down the middle length wise and sliced for 5 servings on each side.
