Home made lasagna, filling and always good. Better calorie count and nutrition if you substitute BOCA Italian sausage for pork sausage

Recipe Ingredients for Lasagna

1 pound Italian sausage
1 pound tomatoes, canned
12 ounces tomato sauce
1 clove garlic, crushed
1 tablespoon basil, dried flakes
1 teaspoon salt
2 teaspoons sugar
2 eggs, beaten
1/2 cup parmesan cheese, grated
2 tablespoons parsley, dried flakes
1 teaspoon salt
1/2 teaspoon pepper
1 pound mozzarella cheese, part skim
3 cups ricotta cheese, low fat
6 ounces lasagna noodles (6 sheets)

Recipe Directions for Lasagna

  1. In large skillet, brown sausage and drain. Add tomato products, garlic, basil flakes, 1 teaspoon salt, and sugar. Simmer for 30 minutes, stirring occasionally.

  2. In separate bowl combine eggs, parmesan cheese, parsley, remaining salt and pepper.

  3. In large skillet, boil water and cook lasagna noodles as package directs. Drain and rinse with cold water.

  4. Preheat oven to 375 degrees

  5. Lightly grease a 9 x 13 cake pan. Line bottom of pan with 3 noodle sheets after draining them.

  6. Spread 1 1/2 cups ricotta cheese over noodles

  7. Spread 1/2 of egg/cheese mixture over ricotta

  8. Spread 1/2 of meat mixture over egg mix

  9. Sprinkle 2 cups grated mozzarella over meat.

  10. Layer remaining 3 noodles over mozzarella

  11. Repeat layers as before, ending with mozzarella cheese on top.

  12. Bake uncovered in 375 oven for 30 minutes.

  13. Allow to set for at least 10 minutes

  14. Cut and serve.

  15. Freezes well before or after cooking, just be sure it is completely defrosted before cooking.
