Fairly low-fat pasta option. Use whole-wheat or spinach lasagna noodles for added fiber bonus.

Recipe Ingredients for Lasagna

500 g beef, ground, 90% lean
4 cups diced tomatoes
1 can tomato paste
1/2 onion, diced
2 cups mushrooms, sliced
255 g lasagna
350 g dry cottage cheese
2 eggs
2 cups part-skim mozzarella cheese, shredded
1 teaspoon oregano, dried
1 teaspoon basil, dried
1 teaspoon rosemary, dried
1 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Lasagna

  1. Chop onions and mushrooms and set aside. Brown ground beef in a deep saucepan. Add mushrooms and onions to beef and soften. Add salt and pepper and seasonings.

  2. Once beef has browned and onions are soft, add tomato paste and tomatoes. Reduce to simmer and let the sauce reduce to a thick sauce. About 30 minutes.

  3. Mix dry cottage cheese with egg. Add seasonings if you wish (salt and pepper).

  4. Grate cheese. Put on water and boil. Add pasta noodles and cook to before al dente... they will cook in the oven as well, so they should still be firm.

  5. Preheat oven to 400. Once sauce is thick and noodles are cooked, spread a little of the sauce in the bottom of a 9x13 pan. Put a layer of noodles on the bottom and then a little bit of the cottage cheese mixture. Add a bit of shredded cheese and then a layer of sauce. Repeat this until all layers are complete.

  6. Cook covered in the oven for 30 minutes. For the last 5 minutes, turn on broiler to melt the cheese on the top of the casserole. Remove from oven and let stand at room temperature for 15 minutes.

  7. Makes 6 generous portions, or 12 lunch-sized portions.
