A Classic lasagna recipe with cottage cheese, slimmed down for those wishing to make healthier food choices.

Recipe Ingredients for Lasagna

8 oz. turkey sausage
16 oz. lowfat cottage cheese
26 oz. pasta sauce
2 cups reduced-fat mozzarella cheese
1/2 cup parmesan cheese
2 eggs
2 carrots, shredded
6 oz. canned white meat chicken
8 oz. lasagna noodles
1 medium onion, chopped (optional)
2 cloves garlic, minced

Recipe Directions for Lasagna

  1. Preheat oven to 350 degrees F.

  2. Brown sausage with onion and garlic in a medium frying pan over medium high heat. Drain any extra fat and remove from heat.

  3. Meanwhile, combine cottage cheese, parmesan cheese and eggs in a bowl, set aside. Mix pasta sauce with one cup water and set aside. Shred carrots and add to sausage mixture along with chicken.

  4. Pour one cup sauce into bottom of a 9x13in. baking dish. Begin layering starting with 1/2 lasagna noodles, followed by 1/2 cottage cheese mixture, 1/2 meat mixture, 1/2 remaining sauce and 1 cup of mozzarella cheese. Repeat with remaining ingredients, finishing with mozzarella.

  5. Cover tightly with foil and bake 1 hour at 350 degrees F. Remove foil and bake another 15 minutes uncovered, or until cheese is lightly browned and edges are bubbling. Remove from oven and let sit for 15-30 minutes before serving.
