Vegetable Lasagna with Tofu "Ricotta Cheese"

Recipe Ingredients for Lasagna

10 oz lasagna noodles
30 oz tomato sauce
15 oz canned tomatoes
1 block tofu
1/2 cup mushrooms, chopped
1 onion, chopped
1 tbsp Basil
1 tbsp oregano
3 tbsp olive oil

Recipe Directions for Lasagna

  1. Boil Lasagna noodles in stock pot.

  2. Chop onions and mushrooms. Heat 1 TBSP olive oil and add onions and mushrooms. Saute and add the tomato sauce and canned tomatoes. Simmer and add oregano and basil. Set sauce aside. In a food processor, add tofu, oregano, and 2 TBSP olive oil. Mix until consistency of ricotta cheese. Layer sauce, noodles, and ricotta cheese. Bake in oven for 20 minutes 350 to desired gooeyness.
