Not very low-cal but a brilliant party treat and is very easy to make :)

Recipe Ingredients for Large Victoria Sponge

8 oz self-raising flour
8 oz margarine
8 oz caster sugar
2 teaspoons baking powder
4 eggs

Recipe Directions for Large Victoria Sponge

  1. Preheat oven to 180 C/350 F/ Gas 4. Grease and base line 2 x 8 in (20cm) sandwich tins with greaseproof paper.

  2. Measure all the ingredients into a large bowl and beat well until thoroughly blended. Divide mixture evenly between the tins and level out.

  3. Bake in the pre-heated oven for 25 minutes or until well risen and the tops of the cakes spring back when lightly pressed with a finger.

  4. Leave to cool in the tins for a few moments then turn out, peel off the paper and finish cooling on a wire rack.

  5. When cold, sandwich the two cakes together with jam. Sprinkle with caster sugar and serve.
