Recipe Ingredients for large oatmeal cookies

3/4 cup white sugar
3/4 cup brown sugar
3/4 cup light margarine
2 eggs
2 tbsp milk, 1% lowfat
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
1 cup flour
3 cups quick oats
3/4 cup raisins

Recipe Directions for large oatmeal cookies

  1. Preheat oven to 350 degrees.

  2. Combine white sugar, brown sugar, and butter in a mixing bowl. Beat until smooth Add eggs one at a time, mixing well after each.

  3. Add milk, baking soda, baking powder, salt, cinnamon, and vanilla to mixture. Beat for 1 minute, until well mixed. Add flour, mix well. Add walnuts and mix. Add oats, one cup at a time, mixing well afer each. Stir in dried cranberries.

  4. Drop by heaping tablespoon onto cookie sheet (I find it works better if you spray the sheets lightly with cooking spray). Make sure to leave at least 2 inches between cookies, as they will spread during baking.

  5. Bake at 350 degrees for about 12 minutes, or until the tops of the cookies are golden brown. Cool on the cookie sheets for about 5 minutes, then move cookies to cooling rack to cool completely. Store in airtight container.
