Recipe Ingredients for Lamb and Winter Vegetable Stew

2 tbsp Oil, Vegetable Corn, Salad Or Cooking
4/5 unit, cooked (yield from 1 lb raw meat) Lamb, Cubed For Stew Or Kabob (Leg And Shoulder)
24 fl oz Beef Broth
8 fl oz Wine
2 clove Garlic
3 tsp Thyme, Fresh
1/2 tsp, crumbled Bay Leaf
2 cup, cubes Squash, Winter, Butternut
1 cup slices Parsnips
1 cup, cubes Sweetpotato
1 cup, diced Celery
1 medium (2-1/2" dia) Onions
4 oz Light Sour Cream
1 oz Gold Medal All Purpose Flour

Recipe Directions for Lamb and Winter Vegetable Stew

  1. Heat oil in large saucepan and brown the lamb meat on all sides. Drain fat and stir in the beef broth and wine. Season with garlic, thyme, salt, pepper, and bay leaf. Bring the mixture to a boil. Reduce heat, cover, and simmer 20 minutes.

  2. Mix in the squash, parsnips, sweet potatoes, celery, and onion. Bring to a boil, then reduce heat and simmer 30 minutes or until vegetables are tender. In a small bowl, blend the sour cream and flour. Gradually stir in 1/2 cup of the hot stew mixture.

  3. Stir the sour cream mixture into the stew pot. Remove the bay leaf and continue to cook and stir until thickened.
